At the heart of Biscotti is Chef de Cuisine Giuseppe Bonura, whose approach is rooted in time-honoured Italian recipes reinterpreted with contemporary technique. He describes his cooking as driven by a deep passion for authentic Italian cuisine, and that conviction shows in the detail of each plate. His storytelling approach means dishes carry a sense of place and intention rather than mere technical exercise.
Signature creations reflect the range of his kitchen: Risotto Al Branzino pairs sea bass with saffron, lemon, and chervil for a dish that is clean and precise; Garganelli brings together tuna tartare, bottarga di mugine, taggiasca olives, and caperberry in a pasta that speaks directly to the Italian coast; Gnocchi Ai Funghi Selvatici leans on wild mushrooms and a 24-month aged Parmigiano Reggiano for something more grounded and satisfying. To finish, the Signature Amalfi Lemon — ivory white chocolate mousse, confit Amalfi lemons, limoncello sorbet — is a composed dessert that closes a meal with brightness and restraint.
