An Italian restaurant with a clear point of view

The Italian cuisine at Luigia is rooted in the idea that good ingredients need time, not shortcuts. Dough for the Neapolitan-style pizzas rests for 48 to 72 hours — a long fermentation that develops flavour and produces a light, open-crumbed base that is noticeably easy to digest. Tomatoes for the sauces come from Campanian volcanic soils, chosen because the mineral richness of that land balances acidity naturally, without additives.
