The hotel’s culinary team, which has earned two Michelin stars at the sister restaurant focus ATELIER, brings its signature style to PRISMA: a delicate fusion of Japanese and Nordic influences, with Asian accents. Where exactly is Felix Kattchin, the "Caveman" from Lake Lucerne? The grill king has moved one village over and is now the head chef at the "Hyg" in Weggis. He has left behind his deputy, Patrick Rohrmoser, who runs the kitchen well, handles the grill, plancha, and smoking box skillfully, and starts his GaultMillau career with 14 points. Most importantly: Rohrmoser is also an "Old Cow Lover"; grilled dishes featuring meat from carefully selected older cows from Central Switzerland remain on the menu. The journey to the old cow in the main course is enjoyable. The artichokes are finished directly on the embers. Young smoked cos lettuce hearts, crème fraîche, ponzu, Belper knolle, and for a bold surcharge of 32 francs, a few slices of sot-l'y-laisses (the best cut from the beef cheek) round off the remarkable starter. Also good: the "Chef's Ceviche" with sashimi-grade hiramasa kingfish in an aguachile broth, as well as the tuna tataki with grilled tuna on a mango-papaya salad. The strangest combination: beef marrow bones and red shrimp tartare on the same plate. "Surf and turf" in a quirky style. The actual grill menu is impressive: Black Angus from Scotland. Wagyu A5+ from Kagoshima. Label Rouge corn-fed chickens from Appenzell. 330-gram veal chops from the region. Secreto from Iberian Pata Negra pork. And substantial offerings from the seafood counter: Tristan lobster tails, sea bass, turbot, red snapper. They are quickly deboned tableside, and the coveted sea bass fritters are not forgotten in the process. New on the menu: the "Signature Tavolata" in three stages, including the old cow; our grandma cow lived happily for 13 years. The chef let the meat hang for 12 weeks before preparing it on the grill with great expertise. The waterfront terrace at the "Park Hotel Vitznau" is a dream: right on the water. Dramatic sunsets. No crowding stress, because non-hotel guests can only secure a table by reservation and aren't just allowed in off the street. The conversational language is unmistakably English, and price-insensitive guests from the US have had quite an influence on the menu: They want pinsa (from the stone oven), they want pasta (spaghetti with caviar), they want Zürcher Geschnetzeltes (made from fillet). These are not really grilled dishes, but even at the "Park Hotel," the customer is king. The cellar holds some of the world's most famous wines, and discoveries from Switzerland are certainly not missing. The Completer blend from Valais rising star Valentina Andrei, for example, was magnificent.
