Celebrated table

Einstein Gourmet

Atop the Einstein hotel's 5th floor, chefs Sebastian Zier & Richard Schmidtkonz serve French-influenced fine dining with 2 Michelin stars and 18 GaultMillau points.

The story

Crafted with passion, served with love

On the fifth floor of the Einstein St. Gallen hotel, with the rooftops of the city spreading out below, Einstein Gourmet has established itself as one of Switzerland's most decorated dining rooms. The restaurant holds two Michelin stars and 18 GaultMillau points — a sustained double recognition that places it firmly among the country's finest tables. Wine Spectator has also acknowledged the cellar with its Best of Award of Excellence, a fitting complement to a kitchen that takes its wine program as seriously as its food.

The Kitchen

Executive Chef Sebastian Zier leads the brigade alongside Head Chef Richard Schmidtkonz, who has cooked beside him for several years. Their approach is rooted in French cuisine, opened outward to global influences — precise and product-driven, with first-class ingredients handled with close attention to detail. The current menu reads as a confident statement of that philosophy: king crab with yuzukoshō and dill, Gillardeau oyster paired with Wagyu tongue and Osciètre Supérieur caviar, Dover sole with veal head and broccoli, and a cap of rump with bean, bell pepper and pickled lemon. Pre-dessert moves through honey, bergamot and Earl Grey before a kumquat course of sesame, curd cheese and poppy seeds closes the savoury arc. A selection of Gruyère AOP — aged 18, 22 or 30 months — is available alongside. Menus run from four to six courses, and a four-course gourmet lunch at CHF 150 per person brings the same French-influenced kitchen to the midday table on Thursdays through Saturdays.

The Room & The Wine

Restaurant Manager Daniel Bölle and Wine Director and Head Sommelier Loris Lenzo guide guests through the evening, drawing on an extensive cellar that earned the Wine Spectator recognition. The pairing of food and wine is treated as a single conversation rather than two separate services — Lenzo's selections are chosen to complement each course rather than simply accompany it.

Occasions

Beyond the regular service, Einstein Gourmet accommodates private events for groups of 25 to 150 guests, bringing the same two-Michelin-star French cuisine to company dinners, family celebrations and seasonal gatherings within the Einstein St. Gallen's dedicated spaces.
