The story
In the small village of Ingelstorp on the Österlen coast, three friends converted an old tractor workshop into something quietly remarkable: a working pasta factory, a deli, a garden, and Il Ristorante — all under the same whitewashed roof. The flour comes from Swedish heritage grains — landrace wheat, emmer, spelt — milled in southern Sweden. The eggs go in, the dough gets kneaded by hand, and what emerges ends up either on the deli shelf or, fresh, on the plates next door in the restaurant.
The kitchen follows the logic the team describes plainly: do what the nonnas always did — cook good things from nearby. The menu shifts with what the garden outside is producing. That garden, a former lawn that local farmer Mats ploughed up, now grows spinach, radicchio, black kale, beetroot, beans, onions and more, all feeding directly into the kitchen. The Italian cuisine here isn't imported; it's reinterpreted through the ingredients of southern Sweden, and the result is exactly the kind of cooking that earns attention.
White Guide awarded Il Ristorante its Fine level recognition, describing tortellini prepared with lemon, browned butter and Parmesan, and hand-rolled rigatoni with a classic tomato sauce finished with freshly harvested tomatoes and burrata. The portions, as the guide notes, are more delightful than large — which is precisely the point.
The interior walls are spectacular enough to be frequently photographed, and natural wine fills the glasses. At the entrance you pass a long bar and a mini-shop stocked with local and Italian delicacies, with a direct view into the bakery where the pasta dough is being worked. The bakery also produces large, soft cinnamon rolls and Italian cookies — available to take away or eat at the outdoor tables in the garden at the back.
The atmosphere is simple and rustic without being precious. Regulars from the area mix with summer visitors drawn to the beaches, rapeseed fields and restaurants that define Österlen. The restaurant runs primarily as a summer operation, with spring and autumn service on weekends — so if the timing is right, it's worth planning around.
