Wild River sits beside the Mårdsele Rapids along the scenic Vindel River in Vindeln, a small town in northern Sweden's Västerbotten region. When a young trio took over a modest eatery at this popular nature spot, they quickly turned it into something the food world further south took notice of – the White Guide awarded them Fine level recognition, noting the restaurant "struck like a comet from the foodie heavens" and became a talking point all the way to Umeå, 130 kilometres downstream.

The team behind it – chef and owner Freddy, restaurant manager and owner Emma Fabric, chefs Samuel and Ivan, and waiter Mattias – describe their style as classically unclassical. There are no rigid rules, no fixed traditions to defer to. Instead, they draw on food cultures from around the world and filter them through their own uninhibited ideas and the exceptional larder that northern Sweden provides.

Västerbotten on the plate

The New Nordic philosophy here is rooted in genuine relationships rather than marketing language. Wild River has built a contact network of dozens of local farms, hunters, fishermen and producers across Västerbotten – from grass-fed beef and outdoor-reared pigs to local game, freshwater fish, foraged ingredients and Västerbotten cheese. Emma collects wild ingredients from the surrounding forests herself during summer. The restaurant is refreshingly direct about provenance: not everything can be local, they say, but local is always clearly and truly at the centre.

Menus change with the seasons and are kept secret until service – a deliberate choice that reflects the team's belief that good things take time. Flavours are allowed to develop; no dish is rushed. The format is simple: order and pay at the till, then sit back. What follows is New Nordic cooking shaped by curiosity and what the White Guide called "commendable finesse."

The experience

The atmosphere is one of genuine warmth. The team's own words – "big laughs, hard work, high ambitions and constant development" – match what guests and critics consistently report: hospitality that makes everyone feel at ease. Joy, as they put it, is non-negotiable. "Without joy, nothing matters, so we focus on having fun while we work."

With a table overlooking the river and a kitchen that refuses to stagnate, Wild River is a compelling reason to travel to Vindeln.

Wild River struck like a comet from the foodie heavens last summer, quickly becoming a talking point all the way to Umeå, 130 kilometres downstream the scenic Vindel River. A young and hungry trio had taken over a modest eatery by the popular Mårdsele Rapids, where the eponymous nature reserve draws vast numbers of visitors every year. With this new team of cooks and servers, though, nature may just get eclipsed. Food – with its origins, flavours and the craftsmanship that goes into preparing it – is what this place is about. Ingredients are brought from nearby woods and lakes, and refined in the kitchen with a sense of curiosity and commendable finesse. Things are allowed to take time here, so that flavours have a chance to develop. The setup is simple: order and pay at the till, then sit down and enjoy. The staff’s hospitality deserves special mention – they make everyone feel comfortable and welcome.
