The story

A Counter, Ten Guests, One Chef

What began as Västerås Dinner Club has evolved into Essence 2.0, now settled in the centre of the city on Källgatan. The entrance is deliberately understated — few people wander in by chance — but those who secure one of the ten seats find themselves in a composed room of green tones and dark wood, facing a long counter where the evening unfolds directly in front of them.

The format is counter dining in its most personal form. Chef Stefan Taylor prepares and plates each course along the bar, within arm's reach of his guests. In the early days Taylor worked entirely alone; today a small team supports him behind the scenes, giving the service a steadier rhythm without losing the intimacy that defines the concept.

The Menu and the Produce Behind It

There is one seating per evening, one set menu for everyone at the table, and it changes daily. The inspiration draws from many directions, but the grounding is firmly seasonal and largely Swedish. During the warmer months, Taylor works closely with local farmers — a significant portion of the vegetable produce comes from Mia at Lilla Labäck, a grower he speaks of with clear admiration. Meat and fish arrive from trusted suppliers. Come winter, preserved ingredients prepared through summer and autumn take on a central role, though the length of the Swedish cold season means some produce travels further when local stocks run short.

Because Taylor works alone on the cooking and service, the restaurant operates on a ticket system: the menu is prepaid, the same for all guests on a given evening, and the kitchen cannot accommodate special diets or substitutions. It is a format closer to a concert than a conventional restaurant — you commit to the experience as offered.

Recognition and Reservation

The White Guide has recognised Essence 2.0 at a very fine level, acknowledging both the quality of the cooking and the coherence of the counter-dining concept. That recognition reflects what Taylor himself describes simply: Essence is the place where he can express himself through cooking and share that with a handful of guests each evening — no investors, no outside pressure, just a chef working with the ingredients and the season in front of him.

Private events for groups of 8 to 12 guests can be arranged, with a package that includes champagne on arrival, the tasting menu and wine pairing.

What was Västerås Dinner Club became Essence and moved to the center. The entrance is anonymous yet elegant; few people just wander in, but those who manage to get a table are welcomed into a sober setting with green tones and dark wood details. The concept is now what we call counter‑dining: the dishes are prepared and placed in front of the guest along the long bar. At the start the chef did everything himself; now there are more people, which gives a completely different flow to the service.
