A farm, a table, and a shared moment

Between the meadows and dunes south of Varberg, a winding road leads from Apelviken to Johnssons Gård — a working farm that has grown into something quietly remarkable. Amid a sourdough bakery, a craft brewery, a ceramics workshop, a fitness center, and a B&B, sits Spiseriet: a farm restaurant and cheese shop that earned recognition in the White Guide for its "very fine level" of cooking and hospitality.

The setting alone makes an impression. Guests can settle under a large oak with a craft beer from neighbor Subbe Bryggeri before moving to the veranda, where fields stretch out in every direction. The White Guide described it plainly: "a proper cowboy hangout" — and that unhurried, unaffected spirit runs through everything here.

Nordic cooking rooted in Halland

Spiseriet's kitchen is built around Swedish cuisine — specifically the produce of Varberg and the wider Halland region. The team pickles, cures, smokes, ferments, bakes, and preserves what each season offers from local farms and suppliers. The goal, as the restaurant puts it, is "unique flavor experiences with the ingredients available for the season." Nothing more manufactured than that.

The drinks program carries the same philosophy. Peter Halldén — named Sommelier of the Year in 2018 — designed a beverage menu focused on natural, small-scale, organic, and sustainable producers. Wine, beer, and non-alcoholic options are chosen with the same care as the food, and regular tastings are held for anyone from curious beginners to dedicated enthusiasts.

The people behind it

Spiseriet was founded in 2019 by Peter Halldén and his childhood friend Linus, driven by a shared passion for food and drink. Today, Peter runs the restaurant alongside Martin Anneflod and Samuel Eriksson. Their stated belief — in "the shared experience, simply and relaxedly sharing the moment at the table" — is visible in how the place is organized: no rigid formality, just good Swedish food, honest drinks, and the calm of the countryside as a backdrop.

Beyond regular service, Spiseriet hosts guest chef evenings, wine and cheese tastings, corporate events, weddings, and catering. A small farm shop inside the restaurant sells Swedish and Danish artisan cheeses and preserves. The whole of Johnssons Gård is, in their own words, "a dream, a reality, and an everyday life" — and Spiseriet sits at its heart.

Between meadows and dunes the road winds from Apelviken to Johnsson’s farm. The first thing we see is an obstacle course in the forest, and then we hear the sound of a CrossFit class. Here there is a B&B with a fitness center, art and crafts, a sourdough bakery, a craft brewery, and a farm restaurant with a cheese shop. The drinks on the farmyard are a proper cowboy hangout; under the large oak you can sit comfortably with a craft beer. From the veranda you have a view over the fields.
