The Drink Comes First

At Dryck och Mat, housed in the handsome Gamla Stationshuset on Olof Palmes Plats in Uppsala, the kitchen works in reverse. Rather than selecting wines to match finished dishes, the team starts with what's in the glass — then builds the plate around it. It's a simple inversion with striking results, and it's precisely this playful, drink-led philosophy that earned the restaurant recognition at the Very fine level in the White Guide 2026.

The guide's own words capture it well: the combination of what is placed on the plate and poured into the glass "elevates the meal to another level — even when we're talking about non-alcoholic options."

Seasons on the Table

The changing of the year is a constant presence here. The menu updates daily, shaped by what's available and what's at its best — a first-of-season primör celebrated on Instagram with genuine excitement, a new steak tartare appearing on a snowy Friday, quail with watercress and peas giving way to whatever the next week demands. This is not a restaurant where the menu sits still.

The current Dryck & Mat tasting menu illustrates the approach clearly: a Chenin Blanc from the Loire pairs with pike-perch, lemon beurre blanc and radishes; an Albariño from Rias Baixas meets langoustine carpaccio with caramelized cream and fino; a South African Syrah-Grenache-Cinsaut blend accompanies quail with peas and olives; and a 2014 Coteaux du Layon closes the meal alongside hazelnut cake, apricot and browned butter ice cream. Wine and food together: 1870 SEK. The menu may well be different by the time you arrive — that's the point.

A Place to Return To

Beyond the tasting format, an à la carte and a dedicated beverages list give regulars reason to come back on their own terms. The room welcomes families, offers outdoor seating and is fully accessible, while a private room makes it suitable for gatherings. Drop-in seats are available every day for those who arrive without a plan — which, given the restaurant's spontaneous spirit, feels entirely appropriate.

Dryck och Mat has made Uppsala a destination for anyone serious about the relationship between what you eat and what you drink, approached with creativity, seasonality, and no small amount of joy.

Another hallmark is playfulness and creativity, both in creating new dishes and in finding interesting drinks that complement them. Or rather the opposite, because here the drink is usually the starting point when the kitchen creates the dishes.
