Gotthards Krog sits inside Kulturhuset Väven on Storgatan in Umeå, a building that also houses a hotel, a deli, and the city's library. That mix of everyday life flowing through the space is not incidental — it shapes the atmosphere entirely. The White Guide describes it as feeling more like an Italian piazza than a cultural centre in northern Sweden, and the easy hum of guests checking in, browsing books, or stopping by the deli next door gives the dining room an energy that no amount of interior design can manufacture.

Year after year, Gotthards earns recognition at the very fine level of the White Guide, a distinction that reflects not just consistent quality but genuine, ongoing refinement. What impresses the guide most is the restaurant's rare awareness of where its ingredients come from — evidenced most concretely by the restaurant's own vegetable growing plots.

Vegetables That Steal the Show

The menu is built around what is in season, with only a handful of meat or fish options alongside a broad, plant-forward selection. Vegetables arrive grilled, smoked, pickled, browned, and raw — sometimes all at once — arranged on the plate with an almost impressionistic precision. The White Guide puts it well: a modest carrot somehow feels complete and total. This is not a vegetarian restaurant. Meat is carefully sourced from a local abatoir, and the whole animal is used. Surprises are built into the meal's structure. As courses progress, new components and flavour combinations emerge in ways that feel considered rather than theatrical. Desserts in particular are constructed in distinct layers — beginning light and airy, finishing at the bottom of the plate with deep flavour, crunch, and a touch of salt.

The Wine List and the Bar

The drinks programme is serious. Gotthards' wine list spans grower Champagne from producers like Jacques Selosse and Dhondt-Grellet, deep selections from Burgundy and Chablis, and bottles from smaller biodynamic producers who, as the restaurant notes, often don't advertise their methods on the label. The team keeps track so guests don't have to. The White Guide specifically highlights the pairing of a plum dish with Pardas Sus Scrofas from Penedès as one of the meal's standout moments.

The bar, the open restaurant floor — called Torget — and the more intimate dining room (Matsalen) each offer a distinct register, from casual lunch to a full tasting experience. In summer, the whole operation moves 100 metres to the riverbank at Gotthards vid Älven, where lunch and dinner are served daily beside the water.

Rooted in Umeå

Recurring events — a Thursday dinner-and-film concept called BioVino, winemaker dinners, and greenhouse evenings at a nearby family farm — show a restaurant that thinks of itself as part of the city's life, not apart from it. Det är ett sant nöje att besöka restaurangen i kulturhuset Väven i Umeå. Vi imponeras av att de år efter år levererar på topp och ständigt förfinar och utvecklar detaljerna. Medvetenheten om matens ursprung är sällsynt hög här, det vittnar väl inte minst egna grönsaksodlingar om. Det växtbaserade får också stort utrymme på menyn. Med endast ett par olika kött- eller fiskalternativ är det grönt i säsong som briljerar. Som grillat, rökt, picklat, brynt, och färskt förstås, samsas vegetabilierna som en impressionistisk målning på tallriken. Men tro inte att Gotthards har blivit en vegokrog – köttet är noga utvalt från det lokala slakteriet och hela djuret tas tillvara. Men frågan är om inte det gröna ändå inte stjäl showen. Med sina små, fina detaljer undrar vi hur en blygsam morot kan kännas så komplett och total. En annan detalj som Gotthards lyckas med är överraskningsmomenten. Allt eftersom måltiden fortskrider dyker nya komponenter och smaker fram. Det blir tydligast i desserterna som är klurigt uppbyggda i smak- och texturlager. Det börjar lätt och luftigt och slutar på fatets botten med djupa smaker, crunch och lite sälta. Dryckerna sticker ut, särskilt rekommendationen till pluman, Pardas Sus Scrofas från Penedès, är en höjdarkombo.  Miljön känns mer som en italiensk piazza än ett kulturhus i Norrland och sorlet från gäster som tittar in i delikatessbutiken alldeles intill, checkar in på hotellet eller besöker stadens bibliotek bidrar till stämningen. Liksom den chosefria personalen, utan dem skulle Umeås hjärta inte banka.
