The story
At the far end of the Bjäre Peninsula, in the small fishing village of Torekov, the Bistro at Torekov Hotell occupies a modern lounge space that feels unhurried from the moment you walk in. The room looks out over the hotel's pool area and, through a pass-through window, into the kitchen itself — a subtle signal that what happens in there matters. Golfers, hotel guests, and locals share the same tables, and the atmosphere is relaxed without being casual.
The kitchen is led by Head Chef Axel Westeson, who draws inspiration from the sea, the shifting seasons, and ingredients that still carry the character of the soil they grew in. That philosophy shows clearly on the plate: Bjäre chicken and tomatoes from nearby Viken gain an extra layer of umami from miso, and locally grown produce deepens both flavour and texture across the menu. It is the kind of cooking that is simultaneously rooted and curious — classical Skåne ingredients pulled into unexpected, often Asian-influenced directions.
The à la carte menu moves through snacks, starters, mains, and desserts with confidence. Oysters arrive two ways — one natural with lemon, one prepared to the kitchen's choice. A rolled carpaccio of Swedish ribeye comes with cold-pressed Bjäre rapeseed oil, pickled green tomato, and semi-dried cherry tomatoes. The Bjäre chicken ballotine, filled with wild garlic and truffle, is served with an herb velouté and acidic carrot purée. Sea trout arrives alongside Bjäre summer vegetables, a shellfish beurre blanc with trout roe, and sugar kelp.
For those who prefer to hand over the decisions entirely, there is a seven-course omakase menu — an ambitious option that reflects the kitchen's confidence in its own direction. A five-course set menu is also available, and the lounge menu runs through the day and evening for lighter bites.
The wine list focuses on organic and natural wines, a considered choice that suits both the relaxed setting and the locally grounded cooking.
White Guide has recognised Bistron among Sweden's recommended restaurants, noting the combination of classic Bjäre ingredients with Asian influences and describing the results as "exciting and ambitious." The miso-enhanced chicken and the depth brought by locally grown produce are singled out as examples of what makes the kitchen distinctive.
The Bistro is part of Torekov Hotell, itself a Nordic Swan Ecolabelled property within the GRAM Group. Sustainability here is not a talking point — it is woven into the sourcing, with meat, poultry, vegetables, cheese, fruit, and berries drawn from local producers whenever possible. The hotel describes its food philosophy simply: "fish from nearby waters, potatoes and strawberries from neighbours who know their soil by heart."
The result is a restaurant that earns its place on the Bjäre Peninsula not through spectacle, but through quiet, consistent attention to where things come from and what they can become.
