At Naturaj on Torggatan in central Sundsvall, the kitchen is not a back-room operation — it is the room. Most of the roughly 40 seats wrap around a solid concrete kitchen bar, placing guests directly in the flow of preparation and plating. The space itself is sober and considered: grey tones, stone, wood and leather, with an atmosphere that reads as quietly elegant rather than showy.

The concept sits at a genuinely unusual crossroads: New Nordic discipline applied to local, seasonal ingredients, sharpened by Japanese precision and warmed by Spanish sensibility. In summer the menu tilts noticeably toward Spanish flavours; the rest of the year a seven-course tasting menu takes shape around whatever the season and the surrounding landscape offer. Because the kitchen draws inspiration from nature, the people it meets and the produce available day to day, the menu is deliberately fluid — details shift as ingredients do.

A tasting menu built on craft and restraint

Dinner at Naturaj runs around two and a half to three hours. The tasting menu is priced at 1 150 SEK, with a carefully matched drinks package at 750 SEK and an alcohol-free alternative at 550 SEK. The wine selection leans toward natural producers, curated to complement rather than compete with the food.

The kitchen's philosophy is stated plainly: respect for the ingredient, the season and the craft. Nordic simplicity, Japanese precision, Spanish warmth — flavour, sustainability and presence in equal measure. It is a tight brief, and the regulars who fill the bar stools night after night suggest it is being met.

Recognition that matters

White Guide awarded Naturaj its "Very fine level" distinction for 2026, noting the loyal crowd at that concrete kitchen bar and the restaurant's ability to deliver an elegant, carefully composed experience — tasting menu and natural wine package included — inside a shopping gallery setting that most diners would not expect to house cooking of this ambition. The guide's verdict: this is no neighbourhood bistro. The Asian-inflected New Nordic cooking here is considered and consistent enough to draw guests back repeatedly.

Det är tydligt att många runt köksbaren i massiv betong som omsluter det öppna köket har varit här förr – och tänker gå hit igen. Men detta är ingen kvarterskrog. Stammisarna till trots är det en elegant historia i sobert grått, sten, trä och läder. Sommartid är det mest spanskt på menyn, men annars serveras här en ombytlig sjurätters och ett omsorgsfullt komponerat vinpaket med många naturligheter.
