The story
It was Bengt Wedholm who opened this fish and shellfish temple on Arsenalsgatan in 1985, and four decades on, remarkably little has needed to change. The mirrored walls still reflect the warm glow of Sarfatti chandeliers. The leather banquettes, patinated by generations of guests from the finance houses and auction rooms nearby, retain their quiet authority. Some things earn their permanence.
Wedholms Fisk holds a "Very Fine Level" recognition from the White Guide, and the citation captures the place well: this is a room where champagne flows freely – into soups, into sauces, and into glasses – and where the wine list, oriented firmly toward classic regions, reflects the same uncompromising standards applied to everything else on the table.
The kitchen's philosophy is stated plainly on the restaurant's own pages: no compromises on service, ingredients, or preparation. The finest produce from the sea is handled with care and genuine craft. Classic Swedish seafood cookery is the throughline – and if the White Guide's observers are to be believed, the sauces are as talked-about as the fish itself. Butter and champagne feature prominently, and guests are not shy about making the most of both.
The menu runs across à la carte, a tasting menu, and a weekday lunch – the latter making this level of Swedish fine dining accessible at midday to the neighbourhood's regulars. Sole meunière has been cited as one of the kitchen's beloved classics, a dish that says everything about the house approach: respect for the ingredient, confidence in technique, no distraction.
The dining room has the kind of atmosphere that only accumulates over time – not designed to feel timeless, simply never having needed reinvention. The service team is widely noted for combining charm with real skill, and the restaurant's own words describe them as "widely talked about." Private rooms are available for larger gatherings, and the bar offers a natural starting point before the meal.
Wedholms Fisk is part of the Melanders Group, a Stockholm hospitality group with a strong focus on fish and seafood across several addresses. Here, though, is where the standard is set.
