A Blackboard Menu That Changes on a Whim

Triton sits on Ringvägen in Södermalm, and it fills up fast — weekends can be fully booked a month out. That tells you something before you've even walked through the door.

The room offers no pretension: bare ventilation pipes painted black like the ceiling, a marine mural running along one wall, shelves stacked with what looks like a cheerful jumble of odds and ends. The atmosphere lands somewhere between a community centre and a very good dinner party, with loosely dressed locals and visitors in easy conversation across a little over a dozen tables.

The Menu Exists Only on a Chalkboard

There is no printed menu, no online preview. The kitchen writes up a three-course tasting menu on a blackboard, and it changes frequently — sometimes spontaneously. The philosophy is straightforward: cook what's good right now, not what was good last week. Vegetarian and most allergy requirements can be accommodated, though a fully vegan menu isn't currently on offer.

Recognition That Speaks for Itself

White Guide awarded Triton a "Very fine level" distinction for 2026, and the reviewer's notes are worth dwelling on. A piece of lightly grilled turbot, barely kissed by heat, wrapped in a near-transparent slice of guanciale and floating in a parsley beurre blanc with tender spinach leaves drew comparisons — unsolicited, from the next table — to one of Stockholm's most celebrated fine-dining institutions. The Guide's own verdict: the fish was "light and indulgent at the same time." That balance, easy to describe and hard to achieve, seems to be what Triton does consistently.

What to Expect

Come without a fixed idea of what you'll eat. Come knowing the room will be loud in the best sense, the crowd mostly in their twenties and thirties with the occasional grey-haired regular mixed in. Come having booked ahead. The set menu format means the kitchen is fully committed to each dish on the board that evening — and on the evidence, that commitment shows.

Nationalteatern i högtalarna. Inredning à la fritidsgård. Nakna ventilationsrör, svartmålade precis som taket, ena långväggen med ett marint motiv, bokhyllor med till synes på måfå hoprafsade prylar. En tidsresa. I varje för oss som var med på 70-talet. Men nostalgin upphör här. Servisen har inte näbbstövlar och snickarbyxor och den föränderliga trerätters avsmakningsmenyn uppkritad på griffeltavla är i högsta grad nutida. Runt dryga tiotalet bord sitter ledigt klädda Söderbor och inresta i glatt samspråk. Mest tjugitrettiåringar men även vissa inslag av peppar och salt-frisyrer. ”Jättejättegott!” hojtar en vid grannbordet. Sällskapet har redan hunnit till andra rätten. En bit lätt, lätt grillad piggvar insvept i en nästan transparent tunn skiva guianciale simmar i en persilje-beurre blanc tillsammans med ett stim lätt, lättkokta spenatblad. Med växande öron noterar vi hur de jämför med en tidigare sittning på Frantzén. Minsann. Och det är bara att instämma i berömmet. Fisken är lätt och goffig på samma gång.
