Mathias Dhalgren

Mathias Dahlgren brings uncompromising aquatic Nordic cuisine to Stockholm's Grand Hôtel, with a wine cellar of 2,700 labels and global recognition.

The story

Crafted with passion, served with love

Situated at Södra Blasieholmshamnen 6, within the storied Grand Hôtel Stockholm, Mathias Dahlgren's restaurant group represents one of Sweden's most seriously considered dining addresses. The operation earned back-to-back positions on The World's 50 Best Restaurants list — ranked 50th in 2009 and climbing to 25th in 2010 — a period that cemented its standing among the world's elite tables.

Seafood Gastro and Aquatic Thinking

The flagship experience today is Seafood Gastro, built around what the kitchen calls "aquatic thinking" — a focused exploration of Scandinavia's waters, from open sea to lake, river, and shoreline. Wild ingredients sourced from the clean waters of the Nordic region are the foundation. The approach is neither decorative nor trend-driven; it is a genuine commitment to understanding aquatic produce in its full range, including species and preparations that are easily overlooked.

The Tasting Menu runs at SEK 3,650, while a Menu Selection at SEK 2,200 is available for Wednesday–Thursday dinners and Friday lunch. Lunch service runs on Fridays, with dinner Wednesday through Saturday.

The Wine Cellar

Few restaurants in Sweden can match the depth of what is on offer in the cellar here. Over 2,700 labels span classic European regions alongside carefully chosen small growers with a sustainability focus. Wines available by request include a Château Mouton Rothschild from 1874 — the same year Grand Hôtel first opened — and a 1914 Pol Roger. Non-alcoholic alternatives are crafted entirely in-house.

Matbaren and Private Dining

Beyond Seafood Gastro, the Matbaren offers a more informal Swedish dining experience within the same address. The two private dining rooms — seating 10 and 14 guests, combinable for up to 24 — allow for fully tailored menus developed in close collaboration with the kitchen team. Sample private menus reveal the kitchen's range: langoustine tartare with bleak roe, red sole stuffed with king crab, baked venison saddle wrapped in Vindeln smoked pork belly, and a chocolate fondant with sour cream ice cream and sea salt. Each course is matched with wines selected by the sommelier team.

The result is a Nordic dining destination that earns its reputation through precision, ingredient integrity, and a rare consistency across every format it offers.
