The Kitchen and the People Behind It

The restaurant is led by Claudio Mancini and Domenico Lobina, whose names appear on invitations and menus alike, signalling a house with clear ownership and personal investment. The cooking draws from the full length of the Italian peninsula: menus are structured around Nord Italia, Centro Italia, and Sud Italia e Isole, treating Italy's regional diversity as a genuine framework rather than a decorative gesture.

What Ends Up on the Plate

The depth of the kitchen's Italian cooking shows most clearly in its special events. A recent winemakers' dinner built around the Tuscan coast of Bolgheri offered dishes like pici al ragù di cinghiale — the hand-rolled thick pasta of Maremma with wild boar — alongside merluzzo alla Livornese, a cod fillet lifted with capers, taggiasche olives, anchovies and fresh tomato in the old style of the Tuscan littoral. A carpaccio of red Mediterranean prawns came dressed with Sicilian extra-virgin oil, orange and lemon; a rosemary-scented saddle of rabbit was wrapped in Lardo di Colonnata and served on a Cannellini bean cream.
