What the Kitchen Sends Out

The White Guide described Copine's cooking as a sweep across Southern Europe, singling out a raw sea urchin with a sharply tangy South American tiger's milk, and a beautifully marbled Spanish plum served alongside delicate bellaverde and a Parmesan-laced polenta. Jim & Jacob’s French girlfriend is truly pleasant. Even though she hasn’t been open for such a raging long time, a kind of insistent Parisian ambience hovers over her. But hello! Can a friend be insistent? Yes, actually. Even though Jim & Jacob are certainly human, they are also a restaurant and Copine the patron. Yet the French mannerisms aren’t super clear in the dishes that the kitchen swiftly sends out to our table. But we don’t let that dampen our Jean‑Paul Sartre‑like lips. The raw sea‑urchin with a robustly tangy South‑American “tiger’s milk” wakes us up in the blue hour, eagerly awaiting the beautifully marbled Spanish plum with delicate bellaverde and a more powerful Parmesan‑flavored polenta. A lot of Southern Europe on that plate – except for the Celtic part. Moreover, a subtle hint of fresh cilantro makes us completely lose our way in the gratin—sorry, the terrain. Still, it feels as if both we and Copine have found home.
