The story
On Engelbrektsgatan in Stockholm's Östermalm, Black Milk Gastro Bar has carved out a distinctive identity in the city's fine dining scene. The concept is omakase — but reinterpreted through a wider lens. Under chef Julian Marti Melo, traditional Japanese principles meet seasonal ingredients and techniques drawn from across the world, producing an eight-course tasting menu that reveals itself only once guests are seated.
The White Guide, which awarded Black Milk its "Very Fine Level" recognition for 2026, describes the opening moments with unusual precision: an intimate, draped entrance, a personal reception, and guests taking their places along the bar at the appointed hour. A light veil of smoke drifts across the room. Chefs in white jackets move behind what the guide calls "the gastronomic stage." Before a single course arrives, the evening's ingredients are already on display — arranged in medicine bottles behind the high bar counter. It is, as the guide puts it, mood-creating and mouth-watering.
That atmosphere is not accidental. The room is designed to be lively, intimate and modern all at once, and the format — a shared start time, a counter seat, a menu kept secret until you sit — gives the meal a sense of occasion that begins the moment you walk through the door.
The tasting menu is priced at 1,500 SEK and changes with the seasons. Each course is built around the best available ingredients from around the world, with the kitchen's commitment to quality and craft evident in every plate. The European and global influences woven through the omakase format mean the menu resists easy categorisation — it is neither strictly Japanese nor conventionally European, but something that draws freely from both traditions.
Beyond the evening omakase, Black Milk also runs a lunch service rooted in slow-food principles and the flavours of southern Europe — a different register entirely, but the same attention to seasonal ingredients and careful technique. The cocktail bar side of the operation is currently being transformed into a private chambre séparée, available for either the tasting menu or a separate dining format.
