The story
On Blasieholmen, steps from the Grand Hôtel and Nybroviken, B.A.R. — Blasieholmens Akvarium och Restaurang — operates on a simple, compelling premise: walk up to the sea grill, point at what you want, and decide how it gets cooked. The fish counter and aquarium display the day's options, whether redfish, seabass, sea catfish, or cod back, all certified and traceable. It is a format that puts the guest firmly in charge.
B.A.R. is run by award-winning chefs and gastronomic partners Peter Johansson, Annette Johansson, and Daniel Frick. Their vision is captured in the restaurant's own motto: good food is an important part of a balanced diet — understated, confident, and entirely apt for a place that takes its seafood seriously without taking itself too seriously.
The concept is built around choice and season. Guests can build a plate from scratch — fresh fish, shellfish, meat, or seasonal vegetables — or order one of B.A.R.'s composed dishes, designed to complement each other in flavour and reflect what the time of year offers. The White Guide, which recognises B.A.R. at Fine level, singles out the grilled cod with aged-cheese risotto as a highlight, and notes that a few crayfish with a glass of champagne is never a wrong decision here.
Beyond the à la carte format, B.A.R. periodically hosts seafood boils — an American-style communal feast of gambas, langoustines, lobster, snow crab, mussels, corn, potato, and chorizo, all served on large platters directly to the table. It is the kind of event the space was made for.
The White Guide describes a young crowd, a high noise level, and a bar area that invites lingering. B.A.R. calls itself "a meeting place for friends, colleagues, and new acquaintances — a timeless bistro environment." The room calibrates to the seasons and to its guests, functioning equally well as a weekday lunch spot (open Wednesday through Friday from midday) and a late-evening destination on Tuesdays and Saturdays. For those who want to take the experience home, there is also a fish market counter and a takeaway service.
Stockholm has no shortage of seafood restaurants, but few give diners this degree of involvement in what lands on their plate — or this central an address from which to enjoy it.
