Hachi

Eight seats, two sittings, around 20 courses decided by the chef. Hachi in Örebro is omakase dining at its most focused.

The story

Crafted with passion, served with love

Eight Seats, No Menu, Full Trust

Hachi occupies a quiet corner of Järntorgsgatan in Örebro, and if you blink, you might walk past it. Step inside and the room is deliberately small: eight seats at the bar, two sittings per evening, and a format that asks you to hand over all control to the chef. That format is omakase — Tokyo-style, seasonal, and entirely dictated by what is best on any given night.

The White Guide recognised Hachi at a very fine level in 2026, describing the experience as a venture into the unknown where around 20 small dishes of sushi and small plates arrive in succession, shaped by season and the chef's mood. It is a rare thing to find this kind of focused Asian dining outside a major capital, and rarer still to find it executed with enough confidence to earn national recognition.

The Format

Bookings open up to 60 days in advance — necessary given the limited covers — and sittings run at 17:30 and 20:30 on Fridays and Saturdays, plus the third Thursday of each month. The omakase menu is priced at 1 145 SEK per person, with a sake package available for 1 835 SEK in total.

Drinks are managed by a sake sommelier. A curated sake pairing is the natural companion to the food, though Japanese beer and natural wines are also on offer. The non-alcoholic options include house-made preparations such as milk-fermented cucumber water and yuzu-ginger lemonade — thoughtful touches that match the precision of the kitchen.

A Few Things Worth Knowing

Because the menu is built around fish and soy, the kitchen cannot accommodate fish or soy allergies, nor can it cater to vegetarians or guests avoiding rice. Guests are also asked to go easy on perfume and cologne — in a room this intimate, strong scents genuinely affect the experience for everyone at the bar.

Private sittings outside regular service hours are available on request, making Hachi a considered choice for a small group looking for something well outside the ordinary.

White Guide — Very fine level

When you’ve booked a spot well in advance, found the bar on the far end of Järntorgsgatan, stepped into the secluded, intimate dining room and taken a seat at the bar, it’s time to go for it! Venture into the unknown and choose Omakase, a Tokyo‑style tasting menu where the chef decides and serves about 20 different small dishes based on season and mood. The drinks are handled by the sake sommelier. A carefully selected sake package is recommended, but Japanese beer and excellent natural wines are also available. The non‑alcoholic options are partly made on site, such as milk‑fermented cucumber water and yuzu/ginger lemonade.
