Sill & Dynamit

Sill & Dynamit in Mariestad serves Swedish classics and global flavors beside Lake Vänern, with house-brewed beer and a White Guide recommendation.

The story

Crafted with passion, served with love

Herring, Schnapps, and a View of Lake Vänern

The name says it all. At Sill & Dynamit, a meal is meant to begin the traditional Swedish way — S.O.S.: smör, ost, sill (butter, cheese, herring) — ideally accompanied by a well-chosen schnapps from the restaurant's generous spirits list. That grounding in Swedish ritual sets the tone for everything that follows.

Located at the guest harbor on Hamngatan in Mariestad, the restaurant sits right on the edge of Lake Vänern, Sweden's largest lake. Large windows frame the water and the harbor's sailing boats, and on sunny evenings the outdoor terrace fills quickly. The space has grown to match its reputation: what was once a small, cozy dining room has expanded into a larger, airy venue, with the original and new sections connected by a glazed wine cellar. Natural materials dominate throughout, giving the room a calm, unhurried character.

Starters That Tell the Story

The menu's starters reveal both the kitchen's provenance and its range. Löjrom — the prized roe from Lake Vänern itself — arrives on butter-fried toast with red onion and smetana, or as the crowning touch on a classic Toast Skagen. Sparris "Benedict" pairs poached egg with a brown butter hollandaise and crispy potato. Alongside these Swedish anchors, the broader menu reaches outward: pickled cucumber and dill share space with kimchi and chimichurri, reflecting an appetite for flavors well beyond Scandinavia.

The sourcing notes woven through the menu — löjrom from Vänern, mussels from the North Sea, honey from Töreboda, shellfish from Norwegian Arctic waters, beef from Swedish farms — speak to a kitchen that cares where its ingredients come from.

Beer Brewed Around the Corner

A street away from the restaurant, the house-brewed Esplanad beer is produced at Bryggeriet i Mariestad, and it naturally anchors the beer list. The connection between kitchen and brewery gives the place a coherent identity that goes beyond the plate. The restaurant also offers catering, conference dining, and occasional beermaker dinners, making it a year-round presence in the town's food scene.

White Guide has recognized Sill & Dynamit in its 2026 edition, noting the restaurant's expanded space, its harmonious interior, and a menu that balances Swedish tradition with broader influences — an assessment that matches what the place delivers on a summer evening by the lake.

White Guide — Recomended

Sill & Dynamite opened for the summer season with a venue twice as large. The previously small but cozy and homely dining room has been joined by an additional airy space, and old and new are linked by a glazed wine cellar. The interior is dominated by harmonious natural materials, and large windows face Lake Vänern and the harbor’s stately sailing boats – and, of course, the outdoor terrace, which is packed and popular on sunny summer evenings. The restaurant’s name hints at how a meal here should begin, an S.O.S, of course, ideally paired with appropriate schnapps from the generous spirits list. The extensive menu also offers both Swedish flavors and colorful influences from other cuisines – pickled cucumber and dill coexist with kimchi and chimichurri. A street away, the house‑brewed Esplanad beer is brewed, and it naturally dominates the beer list.
