Seated in a spotless white dining room at the edge of Pildammsparken, you hand over the decision-making entirely to the team — and that, it turns out, is precisely the point. There is no card to study, no dishes to deliberate over. What arrives at your table is whatever is best at that particular moment, shaped by the season and the soil.

The concept is the creation of founder Igi Vidal, a figure who commands the room with unmistakable energy. After years channelling his attention into other ventures, Vidal has returned to Bloom with full focus, and the White Guide has taken notice — awarding the restaurant a "Very Fine Level" distinction in 2026 and noting that he "takes the stage like a storm" in the airy dining room. That recognition reflects what guests already know: there is something genuinely alive happening here.

A Dialogue with the Seasons

The tasting menu at Bloom evolves continuously, reflecting the landscape outside the glass. Gastronomy and nature are treated as inseparable — every course is described by the restaurant as "a dialogue with the seasons — intimate, intentional, and alive." Sommelier-selected wine pairings, available in both alcoholic and non-alcoholic versions, follow the same philosophy. The setting is designed to dissolve the boundary between interior and park, so the quiet hum of Pildammsparken becomes part of the experience itself.

Menus run from two to seven courses, with the longer formats available by pre-order. Friday and Saturday evenings require a minimum of four courses. A Sunday afternoon tea and a pre-theatre option from 17:00 round out the week, keeping Bloom accessible across different occasions and appetites.
