Right at the water's edge in Fiskebäckskil, with the salt air and the sound of the harbour as a constant backdrop, Brygghuset is the kind of place that earns its reputation through consistency rather than spectacle. The building itself — large, light-green, warehouse-like — sits close enough to the quay that you can watch the boats from your table. On summer days the queue stretches long before the doors even open, and that says more about the kitchen than any description could.

The restaurant describes its own identity plainly: modern cooking rooted in classic French technique, but anchored above all in the food traditions of Bohuslän, the rugged Swedish west coast province it calls home. That means the seasons dictate everything — mackerel returning to the coast in spring, mussels through summer, lobster and oysters by candlelight in autumn.

Fish, Shellfish and the Details That Matter

The focus on fish and shellfish is, as the kitchen puts it, "a matter of course" given the location. What sets Brygghuset apart is the care applied to the smaller things: house-made herring pickles prepared in several varieties, with the blackcurrant version already a local classic, and a generous lunch tray that arrives with gubbröra, several breads, and salad before the main event. The daily house specialty — which might be lamb sausage alongside baked Jerusalem artichokes and a chili mayo with real heat — is hearty and precisely seasoned. The fish soup is a permanent fixture on the menu, and alongside it you might find hake served with herb-infused potatoes, beets, and finely shaved fennel and kohlrabi: familiar ingredients, handled with genuine thought.

White Guide, Sweden's most respected restaurant guide, has recognised Brygghuset at Fine level for 2026, noting that "year after year, solid gastronomy is delivered here with the utmost care for the ingredients" — a description that matches the restaurant's own unhurried confidence.

Beyond the Dining Room

Brygghuset is more than a restaurant. The Whiskybar — named Whisky Restaurant of the Year in both 2013 and 2017 — occupies its own space within the building. The kitchen also organises lobster fishing excursions, events, and conferences, and accommodation is available nearby through Slipens Hotell. It is a place built for people who, as the restaurant itself puts it, "require a little more" from a visit to the archipelago.

Everything is served by dedicated staff who always have a smile nearby. The generous lunch includes a tray with gubbröra, some excellent house‑made herring pickles—a classic is the one flavored with blackcurrants. In addition, there are several types of bread and salad. The daily house specialty, which might feature lamb sausage, baked Jerusalem artichokes, and chili mayo with a kick, is hearty and flavorful. The fish soup is also a classic—it’s always on the menu, but there’s also room for new combinations like the pleasant “kummel” with herb‑infused potatoes, beets, and finely shaved fennel and kohlrabi.
