The story
At Flyinge Kungsgård, a short drive from Lund, Gastro Gaspari occupies a space that feels genuinely lived-in rather than staged. High ceiling beams, an open fire, and dimmed lighting create an atmosphere where the coziness is earned rather than manufactured. The room draws an easy mix of guests — from private celebrations tucked into the adjoining private room to those simply settling in for a long evening by the hearth.
The cooking is rooted in Swedish cuisine, but the kitchen applies a precise, considered touch that has drawn the attention of the White Guide, which awarded Gastro Gaspari its Fine level recognition. The snacks alone signal the ambition: a brittle tart shell filled with cheese cream and truffle, and a macaron pairing sea buckthorn with sea urchin, resting on a bed of yellow peas. These are not afterthoughts — they set the register for what follows.
The pilgrim mussel course captures the kitchen's sensibility well: served in a shell of snail on nettle hollandaise, alternated with grilled pickled cucumber and oyster herb. It is a dish that is as considered visually as it is on the palate. A glass of Skepparps Grand Prix, produced locally, is a natural companion.
Gastro Gaspari is part of a broader estate that includes Gaspari Lodge and Sörgården by Gaspari, offering accommodation, wedding and event facilities, and conference space. Lunch and dinner are both served, and the kitchen extends its Swedish cuisine to catering and private parties. The estate's scale means it can host a celebratory group in a private room one evening and a quiet couple by the fire the next — without either feeling shortchanged.
