The story

Crafted with passion, served with love

A Castle Setting, Grounded in the Kitchen Garden

Restaurang Hvita Hjorten sits within Läckö Wärdshus, the hotel and restaurant house that belongs to the historic Läckö Castle complex on Kållandsö, a peninsula reaching into Lake Vänern outside Lidköping. The baroque castle has stood on this rocky promontory since medieval times, and the wider estate today includes a kitchen garden — Lilla Slottsträdgården — that looks, in the words of White Guide reviewers, more like a well-kept botanical garden than a working vegetable plot. It is this garden that defines what ends up on the plate.

The White Guide, which awarded Hvita Hjorten its Fine level recognition in 2026, captured the restaurant's philosophy precisely: the menu is entirely determined by what ingredients are tastiest on any given day. That commitment to seasonal, hyperlocal produce is not a marketing position — it is structural. The castle garden supplies almost the entire vegetable needs of the restaurant throughout the year, and its harvest shapes every dish.

Nature at the Table

The dining room carries the outside world into it — branches hung from the ceiling, bilberry sprays arranged on the tables — so that the transition from the lakeside landscape to the meal feels continuous rather than interrupted. The result is a fine dining experience with a distinctly Nordic character, rooted in place rather than in imported technique.

The White Guide's description of a recent meal illustrates the kitchen's touch well: tempura-fried cabbage arrives as a starter, presenting the garden directly on the plate, while a glass of blond ale brewed with angelica from the very same garden — produced by Qvänum Mat & Malt — arrives alongside it. A main of meltingly tender pork is served with umami-sweet carrot purée, crisply baked onions, herby mayonnaise and generous quantities of brown butter, balanced at the table by a gamay from the Loire whose acidity cuts through the richness.

A Destination in Full

Hvita Hjorten is open for lunch Wednesday through Sunday, with dinner service on Fridays and Saturdays — a rhythm that suits a destination where guests often combine a meal with a castle tour, a stay at the hotel, or an evening at the summer opera performed in the castle courtyard. The kitchen garden opens seasonally alongside the castle itself, and conference and private event spaces are available for groups who want the full estate experience. For a fine dining restaurant drawing its identity so completely from its surroundings, the setting on the shores of Lake Vänern is not incidental — it is the whole point.

White Guide — Fine level

With Lake Vänern, Läckö Castle and scenic Kållandsö in the immediate surroundings, it’s easy to be enraptured. Hvita Hjorten has a fabulous location, but it’s in the dining room that the magic happens. Nature is present inside the restaurant too – in the branches hung on the ceiling and the bilberry sprays on the tables, but above all on the menu, which is entirely determined by what ingredients are tastiest today. The castle’s magnificent kitchen garden looks more like a well-kept botanical garden, and supplies almost the entire vegetable needs of the restaurant throughout the year. As a starter, the garden is presented on your plate in the form of tempura-fried cabbage, but also in your glass – a blond ale from Qvänum Mat & Malt brewed with angelica from the garden. A meltingly tender side of pork is served with umami-sweet carrot purée, crisply baked onions, a herby mayonnaise and swoon-inducing quantities of brown butter A glass of gamay from the Loire stands up to the sweetness and adds an appetising acidity.
