The story
Wanås Restaurant sits inside a beautifully restored 18th-century barn on Wanås Estate in northeastern Skåne, roughly 90 minutes from Malmö and Copenhagen. The estate itself stretches back to the Middle Ages – Wanås Castle was rebuilt in 1556 – and today it encompasses one of Europe's most internationally recognised sculpture parks, a KRAV-certified organic farm, and beech forests that double as a larder. The restaurant is the culinary expression of all of it.
The White Guide, which awarded Wanås its "Very Fine Level" recognition, put it plainly: the conditions here are optimal. Game, wild mushrooms, berries and herbs come from the surrounding forest and land. Milk, beef and vegetables come from the estate's own organic farm. The kitchen controls the entire process from field to plate, and the menu shifts with what is genuinely at its best right now.
In recent years, guest chef Emma Shields has worked alongside the Wanås kitchen team to shape a seasonal menu that reflects the estate's particular character. The White Guide singled out one early course as emblematic of the approach: a smoky, whole-roasted cauliflower in browned butter vinaigrette, finished with cured grated egg yolk and toasted almonds – restrained, precise and deeply grounded in the produce at hand.
The restaurant's philosophy, in its own words: "Honesty, towards our guests and ourselves, as well as towards nature, is part of every meal and every stay at Wanås."
Limestone floors, metre-thick stone walls, vintage furniture and contemporary art define the interior. Fireplaces warm the dining room on winter evenings; in summer, the long Scandinavian light extends the experience outdoors. Eleven individually designed hotel rooms – built with natural materials and local craftsmanship – mean the experience can extend well beyond dinner.
In 2026, Wanås has moved to an intimate, one-party-at-a-time model: a single family, group of friends or company can book the entire estate for a fully personalised stay, from breakfast in the open air to dinner by firelight among the sculptures. It is a format that suits a place where personalisation and sustainability have always come before scale.
Alongside the White Guide distinction, Wanås Restaurant Hotel has been named on Condé Nast Traveler's Hot List, received three forks in the Falstaff Guide 2026, and won the Culinary Hotel Awards 2025.
