Vesterbrunn Brasserie & Bar sits on the ground floor of a building shared with Sweden's Board of Agriculture and Forest Agency — an unlikely address that somehow suits a restaurant so committed to what the land, forest, and lakes actually produce. The view opens onto southern Munksjön, and the name itself carries centuries of history: a natural spring once drew locals to this very spot to "drink the water," as they called it. The idea of a lively gathering place has simply been revived, with better wine.

White Guide awarded Vesterbrunn its "Very Fine Level" recognition in 2026, citing the kind of confident, personal neighbourhood restaurant that is harder to pull off than it looks. The inspector's note captures the atmosphere well: a sommelier-in-training crouching at the table, a tattoo of a wine glass on her finger, asking whether to "open with something really fun" — and moments later, a fresh rosé lambrusco arriving as the autumn dark sets in outside.

The People and the Philosophy

The story begins in 2013, when Anne — after a decade as head chef — and David, a trained sommelier with a lifelong passion for food and drink, opened their first restaurant together in Jönköping. When Vesterbrunn Brasserie & Bar opened in 2021, it gave their long-held idea a proper home: an evening restaurant serving exclusively local and seasonal ingredients.

Fish comes from Johnny, who fishes primarily in Lake Vättern. Meat arrives almost always from Nässjö. Vegetables, root vegetables, and berries come from a mix of local growers. The kitchen team includes chef John Persson, who recently took bronze in the Swedish Wild Game Chef of the Year competition — a detail that says something about the kitchen's seriousness without needing much elaboration.

David and Anne personally pick, grow, and refine many of the ingredients that make the Swedish brasserie concept here feel lived-in rather than performed.

What to Expect at the Table

The tasting menu — booked as "An Evening at Vesterbrunn" — runs to seven courses built around seasonal ingredients from land, forest, and water. It comes with a carefully composed beverage pairing, with options for wine, beer from small local breweries, or a non-alcoholic juice pairing using ciders from producers along the shores of Vättern.

For something lighter, "Fredagsmys" offers three smaller glasses of wine alongside snacks and sharing plates. The midweek "Mitt i Veckan" menu keeps things simple: two courses for 495 SEK, available as a vegetarian option. A bistro menu lets guests compose their own evening from snacks, starters, mains, and desserts.

The wine bar is a destination in itself. All wines on the list are at minimum organic, many biodynamic, some natural. Part of the selection is imported directly by the restaurant, and the team knows their winemakers personally — sometimes including the names of the winery's dogs.
