Sliperiet sits in Borgvik, a small locality in Grums municipality, surrounded by the forests and farmland of Värmland. The setting is rustic-industrial — wide floorboards, exposed ceiling beams, large windows — and from the dining room you look straight out onto an art hall. That combination of gastronomy and visual culture is not incidental: Sliperiet runs as a seasonal destination where contemporary art exhibitions, live music, and carefully prepared Swedish cuisine share the same address.

Dishes That Don't Leave You Hungry

The kitchen earns its White Guide Fine level recognition through cooking that is refined without being precious. Portions are generous by design. The lemon-baked redfish arrives on a substantial bed of vegetables, accompanied by dill potatoes, trout roe, and a chive sauce. The dry-aged ribeye — a generous cut — comes with plenty of potatoes and vegetables, lifted by a ramson (wild garlic) cream and sherry vinegar. Starters are more classically proportioned: grilled white asparagus with hazelnuts and confit egg yolk, and a Skagen salad that adds salmon and thin crisp slices of sourdough to the traditional mixture. Desserts lean generous as well, with one deliberate exception — a crème brûlée listed plainly as "small" on the menu, a small act of self-awareness that says something about the kitchen's character.

The wine list is focused rather than exhaustive. By the glass, the offer is the sommelier's personal selection: one white, one red, one rosé.

A Place Built Around More Than a Meal

Sliperiet operates May through September, with the art hall at its centre each season. Summer 2026 brings an exhibition of photographs by Anton Corbijn, one of the most influential image-makers working today, shown in what the venue describes as a unique environment. A second exhibition, Vinden, features six contemporary Värmland artists. Guests who pay the entrance fee can slip into the art hall directly after dinner — a natural extension of an evening that already moves between the table and something larger.

Beyond the restaurant, the space accommodates events, private parties, retreats, and group visits, with packages suited to everything from a company outing to a coach trip with friends. The bar, run under the name DORIS & O'Pretto, is available for hire separately. Outdoor seating, parking, and wheelchair access make the site practically easy to reach, even if the address — deep in the Värmland countryside — requires a deliberate decision to go.

The starters are more traditionally proportioned, and also beautifully and colorfully presented. The grilled white asparagus is accompanied by hazelnuts and confit egg yolk. The Skagen salad contains, besides the classic Skagen mixture, salmon and crisp thin slices of sourdough bread. The desserts are generously sized, except for a cute little crème brûlée, deliberately listed as “small” on the menu. The wine list is limited, and by the glass there are only the sommelier’s recommendations: a white, a red, and a rosé. The setting is rustic‑industrial, with wide floorboards, exposed ceiling beams, and large windows. From the restaurant you have a view of the art hall, and you can slip in after the meal—but only for those who have paid the entrance fee.
