The fish and seafood stew is a standout — a broad medley of several fish varieties, shrimp, root vegetables and scallops, finished tableside with a creamy seafood broth poured over. A fried flatfish arrives topped with a whole handful of shrimp, the kind of straightforward abundance that speaks to real quality ingredients rather than elaborate technique.
Not everything on the menu comes from the water. A crisp pearl chicken served with creamy pointed cabbage and dark apple purée shows the kitchen's range, and the desserts round things off with equal care — a peach sorbet paired with goat-cheese parfait and almond cake is the kind of fresh, precisely calibrated finish that stays with you.
Bryggan is also a hotel, and the combination of accommodation, multiple dining venues and a harbour-front position makes it a natural base for exploring the area.
