The ruby-red glow of wine glasses lights up Geijersgatan 12, where Restaurang Natur has spent five years channeling genuine enthusiasm for natural wines into one of Göteborg's most characterful dining rooms. White Guide awarded the restaurant its Fine level recognition in 2026, noting the familiar, pleasantly buzzing atmosphere and the "safe, embraced" feeling created by green walls and deeply knowledgeable staff. Swedish Cooking, Honestly Done

The menu reads like a seasonal shopping list from the Swedish west coast and its hinterland. Snacks set the tone quickly: oysters with Natur's own tabasco, a spoonful of caviar paired with Swedish vodka, or a tartlette of fermented tomato, cheese, seeds and cucumber. The kitchen's confidence with fermentation and smoke runs through the smaller plates too — celeriac with green apple and smoked potato foam, new potatoes baked in bone marrow served with lumpfish roe and potato ice cream, and scallop with sea buckthorn, white strawberries and Thai basil.

Larger plates lean into the same precision. Halibut arrives with seaweed-and-elderflower cucumber, broccoli, jalapeño and mussel velouté; fried sweetbreads rest on butter-poached cabbage with rapeseed and truffle jus. The Swedish cuisine here is neither austere nor showy — it is simply well-considered. A four-course set menu at 595 kr makes the decision straightforward for first-timers.

Natur is small, and that intimacy is deliberate. The restaurant is part of a wider Göteborg hospitality family that includes Bord 27, Totale, Salut, Brasserie Lavette and KaiFo — but each venue has its own identity.
