The story
The corner building at Vasaplatsen 3 has been a gathering place for Gothenburg locals for over a hundred years. Restaurang Fabel now writes the next chapter of that history — a neighbourhood restaurant where trusted classics, both in the glass and on the plate, sit comfortably alongside something fresher and more contemporary. It is the kind of place where regulars and first-time visitors find themselves equally at home, which is precisely why the White Guide awarded Fabel its Fine level recognition, noting the magnetic pull of this corner spot and the ease with which conversations flow alongside the wine.
The menu is rooted in Swedish cuisine without being rigid about it. Starters lean on quality produce: Toast Skagen served the classic way with Kalix bleak roe, Fabel's own steak tartare with watercress emulsion and a mild Korean chilli oil, gratinated Norway lobster with Café de Paris butter, and a smørrebrød with cold-smoked salmon and horseradish. The kitchen's sense of humour shows up early — Köksmästar Andersson's famous fried potato cake, topped with bleak roe and crème fraîche, is simply listed as Pommes Andersson.
Main courses stay close to the Swedish pantry: meatballs with cream sauce, pressed cucumber and lingonberry; dry-aged Swedish entrecôte with red wine jus and herb butter; baked hake with Sandefjord sauce and fresh potatoes. There is also a linguine vongole with salsiccia that quietly signals the kitchen is not afraid to wander when it suits the dish. Several plates across the menu are available in vegetarian versions.
The bar is a genuine part of the offer here, not an afterthought. A good glass of wine, a beer or a spirit is always available, and the atmosphere builds as the night does — on Fridays and Saturdays the doors stay open until 3 in the morning. The warmth and laughter that the White Guide's reviewers remarked upon are not manufactured; they are built into the rhythm of the place.
Fabel also handles catering for private dinners, company events and celebrations, and shares ownership with Ankarsmedjan, a sister restaurant housed in one of the city's finest 18th-century buildings.
