When Year's Chef winner Martin Moses decided to take on Göteborg's restaurant scene, the city took notice quickly. White Guide recognised the result with a Very Fine Level distinction for 2026, noting that the ambition "hits like a straight right" the moment you walk through the door — discreetly muted acoustics, spa-like lighting, service in tastefully matched attire, and sleek chef's aprons all signal that something serious is happening here, without any of the stiffness that sometimes accompanies it.
Human serves modern Nordic cuisine rooted in the best ingredients available right now, often sourced directly from the surrounding region. The format is a tasting menu, offered in two sizes — a Lilla Meny and a Stora Meny — for both lunch and dinner. Dishes on the current menu show the kitchen's range and precision: scallop with green tomato, brown butter, and calamansi vinegar; Norway lobster with carrot, sea buckthorn, spruce shoots, and lardo; halibut with white asparagus, roe, herbs, and beurre blanc; corn-fed chicken with black salsify, wild garlic, and morel. The meal opens with snacks and a signature dinner roll with fennel pollen, leek ash, and "Human butter," and closes with a rhubarb dessert alongside raspberry, lemon verbena, and almond mazarin. Oscietra caviar and hamachi feature on the larger menu, for those who want to go further.
Lunch runs Wednesday to Friday, dinner Monday through Saturday — a rhythm that keeps the kitchen focused and the produce at its peak.
