Margherita as Benchmark

A handful of toppings are on offer, and all of them are good – but the Margherita is the reason to come. White Guide described it as "a rare, magnificent marriage of fantastic ingredients and excellent craftsmanship," and that assessment is hard to argue with. It was long easy to think that Neapolitan pizza could take the baton from the hamburger as the next big food trend. That hasn’t really happened, and the simple explanation may be that it’s not quite as easy to bake a good Neapolitan pizza as it is to flip a decent burger. It requires knowledge, and not least a good dose of passion. Both of these qualities are abundant at little Bov on Gibraltar Street. The cellar space is simply but cozily decorated, and despite the lack of square footage they have managed to squeeze in a small deli section with everything from bread to charcuterie and cheeses. Charcuterie and cheese also serve as options if you want something to nibble on while waiting for the pizza. A handful of pizza toppings are offered, all good, but they’re really secondary since nothing can compete with the Margherita. It is a rare, magnificent marriage of fantastic ingredients and excellent craftsmanship. A true home run. Sympathetically, the short wine list is offered by the glass and includes several fine pizza pairings. Anyone who wants to secure a spot should hang on the line, as the few tables fill up quickly and no reservations are accepted.
