A Rectory, a Hidden Oven, and a Family Obsession with Good Ingredients

When food personality Lisa Lemke and her husband, chef Marcus Nordgren, were clearing out the outbuilding of their home at Prästgården in Skrea Backe outside Falkenberg, they stumbled upon an old bakery oven. That discovery set everything in motion. They lit the fire, topped dough with locally sourced ingredients, and invited people over on occasional evenings. Tables filled immediately — and have rarely been empty since.

White Guide recognised Prostens Pizza at Fine level in 2026, a nod to what makes this place genuinely distinctive: it is not a restaurant pretending to be homey, it actually is someone's home, and the warmth is entirely real.

Roman-Style Pizza, Local Larder, Rotating Menu

The pizza here is Roman in style — thin, crisp, baked in a wood-fired stone oven. But the menu reaches well beyond a single category. Alongside the pizzas, the kitchen puts out a selection of small plates, all built around local and seasonal ingredients, with drinks sourced from the surrounding region and across Europe. The menu changes at least once a month, so regulars always find something new to share across the table. To finish, there is house-churned ice cream.

This is not a classic pizzeria. The format encourages lingering: a few small dishes to start, a couple of pizzas split between friends, something sweet to close.

Garden Tables, Summer Festivals, and Pizza Courses

In good weather, the outdoor seating opens onto Lisa and Marcus's own garden, with fields, meadows, barns, and a church visible in the distance — a setting that is hard to replicate. The restaurant hosts a Pizza & Wine Festival each summer, gathering fellow pizza makers and natural wine producers for long-table dining on the grass, vinyl on the speakers, and pizza straight from the oven.

For those who want to take the craft home, Prostens Pizza runs weekly pizza courses — a shorter class or an extended session with sparkling wine and snacks — teaching the technique behind their particular style of crisp, wood-fired pizza.

Accommodation is also available on the property through their B&B, making an evening here easy to extend into a full stay on Skrea Backe.

Prosten moved out of the rectory a long time ago. Now it is the beloved food personality Lisa Lemke and her family who live here. It was when she and her husband/chef Marcus Nordgren were cleaning out the outbuilding that they found an old bakery oven – and that was the start. They began baking pizzas topped with locally produced delicacies, occasionally on some evenings. The tables quickly became fully booked. The opening hours are now considerably more generous, but it is still difficult to get a table at this charming and personal place. Outdoors it is easier to get a spot, in Lisa’s and Marcus’s garden, surrounded by fields and meadows, barns and tractors, farms and a church.
