Hotell Borgholm

A gastronomic hotel on Öland since 1972, led by Christofer Johansson, with seasonal Swedish menus, a famed herb garden, and one of Sweden's most remarkable wine lists.

The story

Crafted with passion, served with love

Hotell Borgholm has been a fixture on Öland since 1972, though the story of hospitality on this particular corner of Sweden's "Island of Sun and Winds" stretches back considerably further. What began as a place rooted in genuine care for guests has evolved, decade by decade, into one of the country's most talked-about gastronomic addresses — earning recognition from the White Guide at a very fine level in 2026.

A Legacy Shaped by Bold Decisions

The hotel's modern identity was forged in the 1990s by Karin and Ove Fransson, who built what the White Guide describes as "a gastronomic stronghold for herb-loving vagabonds" during a period when Borgholm had largely fallen off the cultural radar. That foundation now rests in the hands of Christofer Johansson — CEO and creative director — who previously earned accolades at Krakas Krog on Gotland and brings that same restless, ingredient-driven sensibility to Öland.

The Herb Garden and the Kitchen

At the heart of the restaurant's identity is an herb garden growing close to 100 different varieties, each feeding directly into the seasonal menus. Swedish cuisine here is not a marketing label — it is a daily practice of sourcing from the Öland landscape and letting those flavors set the direction. Menus shift with the seasons, traditional techniques sit alongside modern ideas, and every dish is built around carefully selected local produce.

The dining room — the hotel's acknowledged heart — is complemented by a bar and living room, a wine cellar, and a summer bistro in the herb garden itself. The wine list has earned its own reputation: one of the most extensive and distinctive in Sweden, ranging from accessible everyday bottles to some of the wine world's most sought-after labels.

More Than a Restaurant

Hotell Borgholm operates as a full gastronomic hotel, meaning a stay here folds accommodation, breakfast, and the restaurant experience into a single, coherent proposition. Afternoon tea, private events, and a kitchen café and deli called Framfickan round out an offer that goes well beyond a single meal. For guests arriving from the mainland, the hotel sits centrally in Borgholm and serves as a natural base for exploring both the northern and southern reaches of the island.

The history of the place is substantial enough that Christofer Johansson has written a book about it — available at the hotel — tracing the arc from 1972 to the present through the changing tides of Swedish gastronomy and island life.

White Guide — Very fine level

Borgholm experienced a golden era in the 1980s when Miami Vice was the style ideal and the town attracted the cool sailing crowd. In the radio silence of the subsequent 1990s, Karin and Ove Fransson built a gastronomic stronghold for herb‑loving vagabonds, a legacy now managed by Christofer Johansson, who previously earned accolades at the dynamic Krakas Krog on Gotland.
