A Manor with a Royal Seal of Approval

King Karl XV reportedly said that if he were not king of Sweden, he would want to be master of Baldersnäs. Standing beside Lake Lax in the heart of Dalsland, the estate makes that sentiment easy to understand. The main building retains its turn-of-the-century character — original tiled stoves, park views, rooms furnished with period-conscious care — while the newer wings offer modern comfort with direct terrace access and uninterrupted water views.

The Kitchen: Local, Seasonal, Honest

The restaurant is where Baldersnäs earns its place among Sweden's recognised dining destinations. Chef Emil Öjentorp and his team have earned a Fine level distinction from the White Guide, a mark that reflects their commitment to the Dalsland larder and to cooking that feels genuinely personal. The philosophy, as the team put it themselves, is food inspired by our mothers — classic Swedish dishes given a considered twist, generous in portion and warm in spirit.

Guests choose between three-, five- or seven-course menus, each built around seasonal local ingredients. Nothing on the plate feels contrived; the cooking draws on what the surrounding landscape offers and handles it with confidence rather than showmanship.

Before Dinner, the Lake

The White Guide's own recommendation says it plainly: book the sauna cabin down by the water and take a dip before sitting down to eat. It is practical advice. The menus are filling, the courses come with care, and arriving at the table with an appetite sharpened by cold, clear lake water is the right way to approach an evening here.

Beyond the Table

Baldersnäs is also a working manor estate — hiking, cycling and paddling are all on offer through the surrounding Dalsland countryside, and the property hosts weddings, conferences and events in spaces ranging from intimate dining rooms to a timber barn that holds up to 300 guests. A Gourmet Package pairs an overnight stay with a tasting menu, making the full experience easy to plan. Stately Baldersnäs is located by Lake Lax, one of Dalsland’s many beautiful lakes. Here you can enjoy a manor‑house lifestyle, hike, bike, paddle—and, of course, eat and drink wonderfully. The kitchen is run by Emil Öjentorp and his team. They work a lot with local Dalsland delicacies in season and love to prepare classic dishes with their own twist and many homestyle influences. Or, as they themselves say: food inspired by our mothers. But before we get to the food: book the sauna down by the lake and take an appetite‑building dip in the clear water! It may be needed; the evening’s dishes are generous and filling, whether you choose the three‑, five‑ or seven‑course menu.
