The Restaurant That Rewrote the Rules

From a cove on the Costa Brava to the top of the global restaurant world, El Bulli's story is one of the most remarkable in modern gastronomy. Founded in 1961 by the Schilling family at Cala Montjoi, just outside Roses, the restaurant became under Ferran Adrià the defining address of avant-garde cuisine — a place where the very language of cooking was reinvented, season after season, until its doors closed in 2011.

Ferran Adrià and the Spirit of elBulli

The name Ferran Adrià is inseparable from El Bulli. Working alongside Juli Soler and a team that came to be known as the Bullinianos, Adrià transformed the remote Catalan cove into a laboratory of ideas that shaped how the world thinks about food. The restaurant's avant-garde approach was never decorative — it was methodical, rigorous, and driven by a genuine obsession with what cuisine could become. That spirit is documented in a twelve-chapter documentary series tracing the restaurant's journey from its 1961 origins through to its 2011 closure and transformation.

A Record of Recognition

The scale of El Bulli's influence is written plainly in the record books. The restaurant was ranked No. 1 in the World's 50 Best Restaurants four consecutive years running — 2006, 2007, 2008, and 2009 — and again claimed the top position in 2002, with further top-three placements across the entire decade. Few restaurants in any era have matched that sustained level of recognition for avant-garde cuisine.

What Endures

El Bulli closed as a restaurant so that something larger could take its place. In 2013, elBullifoundation was constituted as a private family foundation, with Ferran Adrià as president, charged with a triple mission: safeguarding the restaurant's legacy as both a physical space and a documentary archive; sharing its hard-won expertise in innovation and management; and building serious educational content to establish gastronomy as an academic discipline.

The result is elBulli1846 — described as the museum of the restaurant that changed everything — alongside elBulliDNA, a research lab dedicated to gastronomy and innovation, and Bullipedia, a growing body of culinary knowledge. The physical address at Cala Montjoi remains the foundation's home, the same bay where the avant-garde cuisine that captivated the world was born.
