The story
Set within Belmond La Residencia in the village of Deià, El Olivo Restaurante is the fine dining centerpiece of one of Mallorca's most storied properties. The setting alone commands attention: flickering candlelight casts a warm glow across the room, creating an atmosphere that is intimate without being stiff, refined without feeling remote.
The kitchen is led by Chef Pablo Aranda, whose team has crafted a curated 8-course tasting menu that draws on the flavors and traditions of the Mediterranean. The menu is the sole format offered at dinner — a deliberate choice that allows the kitchen to focus on precision and storytelling from one course to the next. It is the kind of meal designed to be lingered over, unhurried.
Wine Spectator honored El Olivo with its Best of Award of Excellence, a recognition that speaks to the depth and curation of the cellar — a fitting companion to a menu built around the produce and palate of the Balearic Islands.
El Olivo sits alongside two other restaurants within La Residencia: Restaurante Miró, which celebrates Deià's artistic heritage through all-day Mediterranean dining, and Tramuntana Grill, where fire-cooked meats, Sóller prawns, Balearic cheeses and olive oil from the property's own grounds anchor a more relaxed outdoor experience.
Throughout the season, the property also hosts a series of culinary events — signature dinners and collaborations with guest chefs — that bring additional dimension to the fine dining offer at El Olivo and across the estate.
Dinner service runs from 7:00 pm (7:30 pm from mid-May through end of September). Non-residents may reserve a table from 30 days in advance. Depending on weather, the setting may shift indoors — though the candlelit ambience travels with it.
