Sommelier Israel Ramírez guides the cellar with a clear philosophy: "We select our wines in order to represent the culture, traditions and landscapes that are part of the history of wine and its new generations." The list spans the breadth of Spain — Rioja producers such as López de Heredia, Artadi, and Benjamín Romeo sit alongside Galician whites from Rías Baixas and sparkling wines from Recaredo — while reaching into France and beyond. The group menus give a clear picture of the kitchen's sensibility. The Crianza menu opens with smoked eel in Iberian ham velouté and moves through line-caught hake with lemon pil-pil and piparra pepper broth. The Reserva level brings white asparagus with blue lobster and a veal shank described as a tribute to Santi Santamaría. At the Gran Reserva tier, Beef Rossini with Périgord sauce and foie gras on brioche anchors a menu that can open with king crab and Oscietra caviar.
