The story
At DiverXO, the motto is as bold as the food: vanguardia o morir — avant-garde or die. Nestled in Madrid's upscale Padre Damián neighbourhood, this is the flagship restaurant of Dabiz Muñoz, one of the most daring and inventive culinary minds of our time. Step through its doors and you enter a dreamlike world where the impossible is not only imagined but plated, where hedonism is the guiding principle and every element of the experience defies convention. In 2021, the international culinary community took notice, placing DiverXO at No. 20 on The World's 50 Best Restaurants — a distinction that confirmed what Madrid had long known.
DiverXO operates exclusively on tasting menus, each designed as an immersive, boundary-pushing voyage. The signature offering, The Flying Pig's Cuisine, is the solid menu priced at €450 per person and can be enjoyed independently. Alongside it, the Metamorphosis liquid menu — also €450 per person — transforms the beverage experience into an equally theatrical affair. For those wishing to elevate further, the sommelier's pairing programme offers three tiers: Eruciforme (€300), Crisálida (€600), and the extraordinary Danaus Plexippus at €900 per person. There is no à la carte option here — only a complete, choreographed surrender to Muñoz's avant-garde vision.
DiverXO is open Tuesday through Friday for both lunch and dinner, and reservations are secured through advance ticket purchase, with new dates released daily 90 days ahead. The restaurant has no dress code — the only requirement is an open mind and a readiness to be transported. As Muñoz's own words put it: a realm of magic where time surrenders, an audacious journey of dreams, defying boundaries and celebrating the art of the limitless. In the world of avant-garde gastronomy, DiverXO stands in a category entirely its own.
