Ranked #2 in The World's 50 Best Restaurants 2025 and currently holding the title of Best Restaurant in Europe, Etxebarri has featured on the list almost uninterrupted since 2009 — a testament to the enduring, elemental power of its cooking.

A Hometown Hero Behind the Grill

Arguinzoniz grew up just around the corner from where the restaurant now stands, in a home without electricity or gas, where his mother and grandmother cooked on the hearth. That primal memory of fire never left him. For more than 30 years, he has devoted himself to mastering live-fire Basque cuisine, designing his own custom grills and refining a philosophy in which the ingredient is always king.

There is no molecular gastronomy here. Instead, Arguinzoniz lets the natural flavours of exceptional produce speak through the grill — from anchovy on toast to milk ice cream with beetroot — every dish kissed by charcoal smoke.

What to Expect at the Table

The 14-course tasting menu — priced at €300 per person, tax included — is the most complete way to experience Etxebarri's live-fire Basque cuisine. Guests dine in a spacious room overlooking the village square, working through Arguinzoniz's homemade chorizo, seasonal baby eels, sea cucumber with green beans, and a grilled red Palamós prawn served with breathtaking simplicity.

The undisputed centrepiece is the charcoal-charred beef chop — impossibly large in appearance, impossibly tender in texture. The plate, almost invariably, comes back clean.

For those who prefer, an à la carte service is also available, though both options are served to the full table. Lunch service only, beginning at 13:30. Reservations are accepted for parties of 2 to 6 guests, with advance payment required upon confirmation.

Kissed by fire: In a small kitchen filled with custom-made grills designed by the chef, Arguinzoniz prepares a series of elegant dishes where the ingredient is king. There is no molecular gastronomy here, as the chef prefers to let the natural flavours of the high-quality produce take centre stage. Everything on the menu is touched by the grill, from anchovy on toast to the milk ice cream with beetroot that ends the meal. Take for instance, a succulent red Palamós prawn simply grilled and served on its own, or the fresh mozzarella from the chef's buffalo served with a juicy tomato slice.
