Nestled within Frank Gehry's legendary Guggenheim Bilbao museum, Nerua is a restaurant where architecture and gastronomy share the same creative spirit. Its name, drawn from the ancient Roman name for the river Nervión that winds through Bilbao, signals a deep rootedness in place — a quality that defines every dish served here.

Josean Alija and the Philosophy of Muina

At the heart of Nerua is chef Josean Alija, whose culinary journey through the great masters of contemporary cuisine led him to forge a voice entirely his own. Aroma, beauty, texture, and flavour are the four pillars of his cooking — an essential, approachable Basque cuisine that never loses sight of its origins.

That philosophy is encapsulated in a single Basque word: Muina — meaning core, heart, or essence. It is, as Alija describes it, the soul of the kitchen. Nature sets the rhythm here. The menu changes three times a year — spring, summer, and autumn-winter — shaped by close collaboration with local producers to guarantee the freshest, highest-quality ingredients from the surrounding gardens, sea, and farms.

The Menu: Seasonal, Local, Deeply Basque

The Muina tasting menu (€110) is a journey through the landscape of the Basque Country. Guests might begin with a Poget Oyster Omelette or silky Artichoke with baby squid in black sauce, before moving to iconic Basque cuisine signatures such as Hake Kokotxa with pork ear, cockles, and green sauce, or Fried Cod with Biscayne sauce. Heartier courses bring Glazed Pork Belly with blood sausage pâté and cabbage, or tender Suckling Lamb with celeriac and sherry — all culminating in a Chocolate Cake with raspberry and frozen beer.

For those preferring à la carte, standouts include a Spider Crab whisky soufflé and Squid fried with tiny shrimp and anchovy pil-pil. Artisan wheat bread with olive oil accompanies every table.

To elevate the experience further, a curated wine pairing (€50) or a non-alcoholic pairing (€42) is available — a fitting complement to such considered Basque cuisine.
