A House Built on Roots

"Touching the roots to dream, travel, discover, feel a territory and fly to arrive at the same starting point — Azurmendi is my home." That sentence, from chef Eneko Atxa himself, says more about this restaurant than most reviews could. Situated in Larrabetzu, a short drive from Bilbao, Azurmendi has earned a place among the world's most closely watched restaurants — appearing in the World's 50 Best Restaurants every year from 2014 through 2021, reaching as high as 14th globally. The recognition is not incidental; it reflects a kitchen that has stayed genuinely itself while the industry moved around it.

The Philosophy Behind the Food

Eneko Atxa's contemporary Basque cuisine is framed, in his own words, as "a journey through time, from yesterday towards tomorrow, from a love of traditions, craftsmanship and the contemporary, towards a place called simply pleasure — identity-driven pleasure." That is not a vague aspiration. It shows up in the details: bread baked in-house daily, including milk bread from Juan Zabala's farmhouse and corn bread from Mungia; herbs, buds, flowers and vegetables collected or cultivated by the Azurmendi team every morning; eggs from the restaurant's own hens.

The Menus

Two tasting menus are offered. The Adarrak ("The Branches," €315) opens with a welcome picnic — brioche with tuna and piparra peppers, Gernika bean broth, a BETIZU tart with chimney butter and caviar — before moving through a sequence of stations: the kitchen table, the garden, the viewpoint. Dishes such as charcoal-grilled lobster with vegetable broth and shell butter, sea urchin with chamomile, and teardrop peas with Iberian ham gel on duck flan show the range of the contemporary Basque kitchen at work here. The Gran Menú (€350) extends the experience further, adding chocolate-covered partridge and additional courses before arriving at the dessert landscape of "Honey and a Thousand Flowers."

Before the sweet courses, a seasonal cheese trolley — national and international — appears at the table. Azurmendi's sommeliers offer a curated wine pairing for €150 per person, or a selection of great wines for €300, making the enogastronomic dimension of the meal as considered as the food itself.

The Building as Statement

Sustainability is not an afterthought here — it was the starting premise of the building's design. The architecture deliberately dissolves the boundary between interior and exterior, with nature introduced inside and extending across the roof, where a sustainability centre operates. The structure itself is as much a part of the Azurmendi experience as anything on the plate.
