The story
On the coast of Getaria, at latitude 43° North where the Cantabrian Sea meets the Basque hills, Elkano has stood for decades as one of the most revered seafood grills in the world. What began as a humble transformation — Pedro Arregui converting his mother's grocery store into a bar, then adding a small street-side grill — grew into a pilgrimage destination for the greatest chefs on the planet. Pedro's guiding principle was disarmingly simple: "Al pescado como a las personas, hay que mirarlo a los ojos" — look fish in the eyes, as you would a person, to know it is truly fresh. And his standard was uncompromising: "Si no me traes lo mejor, al Elkano no vengas."
The founding legend of Elkano centres on a moment of inspired improvisation. A fisherman arrived with an enormous turbot that would not fit a single grill, so Pedro placed it across two and roasted it whole — skin on. That audacious act, along with the decision to grill the whole head of a hake (previously discarded or used only for stock), redefined the possibilities of the Basque seafood grill. Elkano went on to earn a Michelin star, and its influence on grilling culture is felt around the world.
Today, Pedro's son Aitor Arregui leads the house alongside his family, carrying forward a philosophy they call "Mar de Brasas" — emotional grilling. The approach is one of extreme minimalism: maximum respect for the ingredient, minimum intervention by the cook. The menu changes daily according to what the local arrantzales (fishermen) and baserritarras (farmers) bring in each morning — by zone, species, and season. Sustainability and traceability are not trends here; they are the foundation of everything.
The centrepiece of the Cantabrian Sea-inspired menu remains the legendary whole turbot, grilled over open embers with the restraint and confidence that only decades of mastery can produce. Visitors are invited to understand the landscape before they dine — the surrounding mountains, the fishing culture, the terroir that gives every dish its meaning. Elkano is ranked #24 in The World's 50 Best Restaurants 2025, and has featured consistently in the list since 2019, affirming its place as a true cathedral of Basque seafood cuisine.
In the spirit of Juan Sebastián de Elcano — the Basque explorer who first circumnavigated the globe — the Arregui family has extended their grill philosophy to new shores: Cataria in Sancti Petri and Guethary in Palma de Mallorca, each reflecting its own local seafood landscape with the same devotion to honesty and craft.
