OPNNG operates on a single, quietly radical idea: that taste is something to be opened, not fixed. The tagline on the door — "Try not to have preferences. There's no way out" — sets the tone for what awaits below street level in Gangnam's Dosan-daero neighborhood. Since opening in July 2021, this wine bar has drawn a following that comes for the bottles, stays for the food, and leaves thinking about the art on the walls.

Wine Spectator recognized OPNNG with its Best of Award of Excellence in 2023, a distinction that reflects the depth and curation behind a list of more than 500 labels — an unusually serious commitment for a bar of this character.

The Wine List, Demystified

Where most wine bars rely entirely on staff recommendations, OPNNG hands guests a proprietary tablet menu that lets them filter the entire selection by grape variety, type, region, tannin level, body, and sweetness. Professional sommeliers are on hand to guide choices, but the system is designed so that a guest who simply knows they prefer something light and dry can find it without asking. It's a small but meaningful shift in how the experience is structured — less performance, more discovery.

French and Italian Cuisine Built for the Glass

The kitchen is organized around one goal: the best possible marriage between food and wine. The menu spans small dishes, pasta, steak, cheese, charcuterie, and dessert — a range firmly rooted in French and Italian tradition. Nothing on the plate is incidental; every element is chosen to make both the wine and the food taste better together. On special occasions — Christmas, Valentine's Day — the format shifts to a dedicated tasting menu announced in advance.

Art as Atmosphere

The owner is also a collector, and the space functions as a living gallery. Works by Korean and international artists rotate through the room on an ongoing basis, with one or two dedicated exhibitions held each year — collector's shows accompanied by a personal curatorial essay called "A Defense of Collecting." It is not a gallery that happens to serve wine; it is a wine bar that takes art seriously enough to exhibit it properly.
