The story
Baran-Rapan has grown into something rare: a restaurant that shapes the gastronomic identity of an entire city. Located on Teatralnaya Ulitsa in central Sochi, it draws guests from across Russia for its fresh Black Sea seafood, a kitchen that never stands still, and a wine program built on honesty rather than prestige markups.
Head chef Andrey Gryazev is a native of the Krasnodar region — the same southern territory whose produce, farmers, and fishing grounds feed his menu. He came up through the restaurant from its earliest days, learning under both of his predecessors before taking the helm. That continuity shows: Gryazev's cooking is rooted in a deep understanding of southern Russian ingredients, yet it stays restless. He actively seeks out rare Black Sea fish and local seafood, works directly with regional farmers, and keeps the menu in a state of deliberate evolution. In 2021, the magazine Sobaka named him Best Chef.
The restaurant operates across two floors with two distinct personalities. The ground floor is a relaxed gastro bistro — approachable, generous with local specialties, and priced accordingly. The second floor, called Novaya Glava (New Chapter), shifts register entirely: an intimate fine dining space designed for occasions that call for something more considered and inventive.
Chief sommelier Maksim Kochnev has built a cellar of more than 1,000 labels guided by a clear philosophy: prioritize family estates, non-commercial producers, and Russian wines with genuine character — wines, as the restaurant puts it, that "have a soul." Pricing is kept fair by design.
That approach has earned sustained recognition. Wine Spectator awarded Baran-Rapan its Best of Award of Excellence, a distinction that places the wine program among the most serious in the country. Russian Wine Awards has repeatedly honored the list with three stars across categories including best classical list, best wines by the glass, and best selection of Russian wines. In 2024, Kochnev himself was named Sommelier of the Year by the WHERETOEAT Russia awards.
Baran-Rapan also hosts CCFEST — Chef's Collaboration Fest — an annual series of collaborative dinners in which leading Russian chefs cook alongside Gryazev. In 2024, marking the restaurant's tenth anniversary, the festival ran ten dinners over ten months, cementing its reputation as one of the most anticipated culinary events in southern Russia.
