A Return to Roots

Nativ was built on a simple conviction: the best thing you can put on a plate is an honest Romanian ingredient, treated with skill and left close to its natural form. The restaurant's own words say it plainly — "we looked toward our roots and chose to valorize the effort of small local producers who care for their land, and the love of farmers for their animals." That philosophy shapes every decision, from the aged beef raised on Romanian pastures to the salt sourced directly from a local salt mine.

The result is a steakhouse where beef sizzles on a charcoal grill and the menu shifts with the seasons, but the commitment to unprocessed, additive-free, locally sourced ingredients never wavers.

Three Principles, One Kitchen

Nativ operates around three stated pillars. First, Romanian-origin ingredients: everything on the plate comes from nearby producers, and the kitchen cooks only with unprocessed foods or those processed naturally, without artificial stabilizers or preservatives. Second, producer accountability: the team traces where each animal was raised, how vegetables were grown, and whether every product meets a clear quality ethic. Third, simplicity on the plate — dishes are presented as close to their natural state as possible, with taste, texture, color, and aroma taking precedence over elaborate presentation.

Head chef Andrei Leonard (Frățilă) leads the kitchen day to day. The restaurant also runs a recurring series of guest-chef dinners called Savori Locale ("Local Flavors"), which have brought in chefs including Horia Șimon, Istvan Deak, and Ionuț Crișan — each sharing the same slow-food, local-produce philosophy. Istvan Deak, who serves as executive chef, has described his own path in terms that mirror Nativ's identity: moving to a village farmhouse, raising heritage-breed animals, planting heritage seeds, and building a sustainable life around local production.

What to Expect on the Plate

Guest-chef menus have included dishes like charcoal-seared beef tenderloin with layered duck-fat potatoes and bone marrow foam; smoked trout with elderflower vinegar, honey, and trout roe on dark bread; and braised beef cheek with beetroot sauce, celery purée, and juniper red-wine reduction. These special menus give a clear window into the kitchen's sensibility: technically precise, ingredient-led, with a strong sense of place.

The regular menu covers lunch and dinner, with a dedicated weekday lunch offering described as inspired by "the taste of childhood" — a rotating weekly format that changes to reflect what's in season.

The Wine List

The wine program earned Nativ a Wine Spectator Award of Excellence in 2025, a recognition that places it among a select group of restaurants worldwide with a thoughtfully curated cellar. Guest reviews describe the wine list as pairing "perfectly" with the food — fitting, given that the kitchen's Romanian-first ethos extends naturally to the country's own wine regions.

The Atmosphere

Nativ describes itself as a place "without pretension, but with plenty of good taste" — somewhere you feel as comfortable as among friends. The space accommodates private events and outdoor seating, and the portions are noted by guests as generous. It is, in the restaurant's own framing, "a place for body and soul."
