Touched by the Ember

Since 2023, Prime Steak & Seafood has occupied a prime address inside the Radisson Blu Hotel on Calea Victoriei, one of Bucharest's most storied boulevards. The restaurant reopened with a deliberately crafted concept the team calls "touched by the ember" — a philosophy that shapes every plate that leaves the kitchen. The motto is direct: "if it ain't touched by the hellish charcoals, it ain't cooked by us." That means the Josper charcoal oven and an in-house smoker are the heart of the operation, driving both the flavour and the identity of the menu.

Prime Cuts and Coastal Plates

The steakhouse menu spans a confident range of prime cuts — Tomahawk and T-Bone from USDA Creekstone, bone-in Rib Eye from Romanian Black Angus, and a grain-fed Uruguayan Rib Eye, all priced by the hundred grams and served with a choice of chimichurri, béarnaise, au poivre, or mojo verde. A home-smoked brisket and a Mangalica tomahawk from Hungary round out a selection that travels well beyond the expected.

Seafood holds its own alongside the meat. The kitchen offers a daily catch — seabass, turbot, sole or seabream, grilled, oven-roasted or baked in salt crust — alongside Galician-style octopus, Black Tiger king prawns, and AOP Ecuador prawns with garlic, chilli and parsley. Starters lean into the same confidence: Gillardeau oysters, bone marrow beef tartare with French fries, foie gras escalope with brioche and foie gras ice cream, and a seabass ceviche with spicy mango and avocado cream.

The menu bridges classic à la carte tradition with modern avant-garde touches — a balance the team describes as "ingeniously blending the old with the new, meticulously reconstructing classic recipes with modern ones, from appetizers to desserts."

The wine program earned Prime a Wine Spectator Best of Award of Excellence for 2025 — recognition that reflects genuine depth and curation. For a steakhouse, the pairing between fire-cooked meat and a well-chosen bottle is the natural culmination of the meal, and the list here is clearly built with that in mind.
