Nova Wola was born out of a love for "refined simplicity" — a phrase that captures both the restaurant's philosophy and its place in Warsaw's dining landscape. Situated on the first floor of the Crowne Plaza Warsaw – The HUB at Daszyński Roundabout, it sets out to take centre stage in the city's premium casual dining market without pretence or excess.

The menu is curated by Executive Chef Paweł Suchenek, whose approach is grounded in high-quality ingredients sourced from Polish suppliers and foraged in the wild. The result is authentic Polish cuisine that feels contemporary without losing its roots.

What's on the Plate

The menu moves through familiar Polish territory with confident, considered touches. Starters include matjas herring in linseed oil with pickled cucumber and honey salsa, beef tartar with pickled vegetables and artisan bread, and pierogi prepared daily by the kitchen team. Soups — sour rye with hard-boiled egg and white sausage, or red borsch with white beans and dill — are the kind of thing that earns loyalty.

Main courses cover both land and water: a pan-fried catfish fillet arrives with black lentil and crayfish in butter sauce with caviar; baked trout from Zielenica comes with potato dumplings, grated egg and butter sauce. The grill section runs from bavette steak to a 28-day dry-aged rib eye, all served with homemade fries and a choice of béarnaise, pepper or herb butter. Desserts keep the same honest character — a "Pleśniak" cake of shortcrust pastry with blackcurrant jam, or a baked cheesecake with white chocolate and raspberry sauce.
