The story
BOSQA is the signature restaurant of the Aspen Prime resort in Podlesie, near Jastrzębie Zdrój, and it was born from two passions that travel well together: a love of cooking and a love of travel. The kitchen draws on those journeys to bring distant flavors to the table, built around a concept the team describes as Mare e Monti — sea and mountain — weaving Mediterranean influences through a foundation of honest Polish cuisine.
Two names shape the culinary direction at BOSQA. Head Chef Olek Czyż leads the kitchen day to day, crafting a menu of fixed seasonal sets enriched with rotating dishes that follow what's best at any given moment of the year. Alongside him, celebrated Polish chef Karol Okrasa is a creative collaborator — guests may even spot him in the kitchen — whose presence signals the restaurant's ambition to push beyond the expected and into genuinely original flavor combinations.
BOSQA holds the Wine Spectator Award of Excellence, a distinction the restaurant notes is held by only a handful of establishments across all of Poland. Wine Spectator grants this award exclusively to restaurants with an exceptional, thoughtfully curated wine list, making it a natural complement to a table where Mediterranean and Polish cooking meet — and where wine pairing is taken seriously as part of the dining experience.
